Raw Vegan 🍓Lime Cheesecake!!
Finally the anticipated recipe.. Hahaha a lot of you really just couldn’t wait!
~Crust, pulse in food processor until it creates one big ball of fine grain, then press down compactly into a 12 individual tin and refrigerate to set:
•1/2cup Raw Pumpkin Seeds
•1+1/2cup Dates, soaked in warm water for couple minutes until softened then drained
•4tbsp Unsweetened Shredded Coconut ..
~Cheesecake mixture, pulse in food processor until silky smooth and pour over the base crust:
•1+1/2cup Cashews, soaked in cold water overnight or at least 8hours then drained
•1/2cup Coconut Milk
•2tbsp Coconut Oil, melted
•1/3cup Strawberries, diced
•1/3cup Lime Juice
•2tbsp Maple Syrup (or Agave)
•Zest of 1 Lime ..
~Topped with Sliced Strawberries, Unsweetened Shredded Coconut and more Lime Zest, then store in the freezer for 4hrs but overnight is better!
~Take out from freezer 30mins before serving so it would be nice and soft!
